Apple, Cranberry and Oats Layer

Ingredients

Serves 4

1 large cooking apple, peeled, cored and sliced
6 tbsp Hermesetas Granulated Sweetener
zested rind and juice of 1 lemon
75g pack dried cranberries
25g (1oz) low fat margarine, suitable for cooking
75g (3oz) oats

Preparation

Put the cooking apple in a pan with 3 tbsp Hermesetas Granulated Sweetener and the juice of ½ lemon. Bring to the boil, reduce heat and simmer for 2-3 minutes, until just tender. Allow to cool.

Mix the cranberries with remaining lemon juice and
2 tbsp Hermesetas Granulated Sweetener. Leave for 15 minutes.

Melt the margarine and fry the oats with remaining Hermesetas Granulated Sweetener for 3-4 minutes, until crisp.

Put some apple in the base of four glasses and then a layer of oats. Put most of the cranberries in as the next layer before topping with more apples. Sprinkle oats over and top with remaining cranberries. Arrange the zested rind on top and serve.
