Apricot Pashka

Ingredients

Serves 6-8

8 apricots, 6 of them halved and stoned
8 tbsp Hermesetas Granulated
500g tub cottage cheese
150g carton natural yoghurt

Preparation

Slice 4 of the apricots and cook in 4 tbsp of water and 3 tbsp of the Hermesetas Granulated, until soft. Whiz in a blender to make a purée.

Roughly chop 2 apricots and reserve the rest to slice for decoration.

Whiz the cottage cheese in a processor to makeit smooth. Add the natural yoghurt and the remaining Hermesetas Granulated and whiz again. Add the purée and whizz once more. Stir in the chopped apricots.

Line a sieve with a piece of muslin or a thin, dampened teatowel. Put the cottage cheese mixture into the prepared sieve, level the top and stand over a bowl. Chill overnight.

Carefully loosen the edges of the pashka and turn out onto a flat plate. Slice the remaining apricots and decorate. Serve immediately.
