Berry Gratin

Ingredients

Serves 4

400 g berries (strawberries, raspberries or blueberries)
3 Tbs Hermesetas Granulated Sweetener or
1 Tsp liquid Hermesetas
4 Tbs kirsch or raspberry brandy
2 egg yolks
4 Tbs Hermesetas Granulated Sweetener
½ vanilla bean, seeds
120 g sour milk
2 egg whites

Preparation

Place the berries in a bowl. Sprinkle with Hermesetas and add the fruit brandy. Turncarefully and let marinate for one hour.

In a bowl combine egg yolks, Hermesetas and the vanilla seeds. Beat until the mixture is slightly fluffy. Stir in the sour milk and mix well. Beat the egg whites until stiff and fold carefully into cream.

Fill four ramequins with the berries and top with prepared cream. Place under preheated broiler (grill) for 2 minutes or until golden brown.

Serve without delay.
