Berry-Terrine

Ingredients

For a terrine with a content of about 1 liter
Yields 8 servigs

200 ml (2 dl) fresh
grapefruit juice
(pink-fleshed fruits)
7 Tbs Hermesetas Granulated Sweetener or
2½ Tsp liquid Hermesetas
1 Tbs Agar-agar*
600 g fresh berries of various kinds

Sauce:
270 g plain yogurt
5 Tbs Hermesetas Granulated Sweetener or
1 Tsp liquid Hermesetas
1 lime, grated rind

Preparation

In a pan blend juice, Hermesetas and Agar-agar. Stir well. Keep stirring while bringing to a boil. Cook for 1 minute.

Remove from heat source and let cool but not set. Line the terrine with transparent film and fill with the fruit mixture. Place in refrigerator for a few hours.

In a bowl blend all the ingredients for the sauce.

Unmold the terrine and cut into slices. Serve with the sauce.

* This recipe calls for Agar-agar. Its thickening power depends upon the particular brand and, therefore, we recommend that the directions on the package be followed carefully.
