225g (8oz) self-raising flour
½ tsp baking powder
2 tbsp Hermesetas Granulated Sweetener
2 large eggs
150ml (½pt) skimmed milk
100g (4oz) blueberries, roughly chopped
25g (1oz) chopped walnuts
1 tbsp oil
Sift flour, baking powder and Hermesetas Granulated Sweetener into a bowl.
Beat in the eggs and the milk then add blueberries and walnuts with the oil to make a soft dropping consistency.
Lightly oil a griddle plate or large flat frying pan and add the mixture in spoonfuls spacing them well apart.
Cook over a moderate heat until bubbles start appearing on the surface then turn over and cook the other side so they are evenly brown.
