Currant and Campari Pudding

Ingredients

Serves 6

600 g currants, red, black, white or mixed
12 tbsp Granulated Hermesetas
2 dl Campari
1 packet Agar-Agar* powder

kJ kcal Carbohydrates Fat

Preparation

Combine half the currants with all other ingredients in a pan and bring to the boil, stirring all the while. Simmer until the fruit has burst open. Stir in remaining berries.

Pour mixture into cups or individual moulds. Leave to cool, then place in refrigerator for a few hours to set.
Place moulds in hot water, turn out puddings onto chilled plates, and serve garnished, if desired, with additional currants.

*This recipe calls for Agar-agar. Its thickening power depends upon the particular brand and, therefore, we recommend that the directions on the package be followed carefully.
