Serves 6
200 g (7 oz) bag mixed continental leaves
1 head chicory, sliced
225 g (8 oz) young spinach leaves
For dressing:
1 Tbs Hermesetas Granulated Sweetener
6 Tbs natural yoghurt
6 Tbs olive oil
2 Tsp wholegrain mustard
2 Tbs lemon juice
1 Tbs freshly chopped coriander
salt and freshly ground black pepper
Wash continental leaves, chicory and spinach and drain well. Arrange in a serving bowl.
Place all the dressing ingredients together in a screw-topped jar and shake well to blend.
Pour over the salad and serve.
