For a terrine mould holding about 1 litre
Serves 8
1 litre milk
250 g (pudding) rice
2 kiwi fruit
1 melon
6 tbsp Granulated Hermesetas
grated rind and juice of 1 lemon
1 packet Agar-Agar*
Combine rice with the milk in a pan, bring to the boil, and simmer over a low heat for about 30 minutes, stirring occasionally, until cooked.
Peel, halve and slice the kiwi fruit. Halve the melon, deseed, and scoop the flesh out with a melon baller.
Add Hermesetas, lemon rind and juice and Agar-Agar to the rice; bring to the boil, stirring all the time. Simmer for 1 to 2 minutes. Stir in the fruit. Turn rice mixture into a loaf tin, lined with cling foil. Leave to cool, then chill thoroughly in the refrigerator for about 3 hours.
Unmould the pudding, and cut into slices. Melon balls or fruit salad may be served with the dish.
*This recipe calls for Agar-agar. Its thickening power depends upon the particular brand and, therefore, we recommend that the directions on the package be followed carefully.
