Serves 6
Parfait:
2 egg yolk
5 Tbs Hermesetas Granulated Sweetener
2 Tbs hot water
3 Tbs instant coffee
2 egg whites
180 ml (1.8 dl) light cream
Figs:
4 fresh figs
4 Tbs Madeira
2 Tbs Hermesetas Granulated Sweetener or
½ Tbs liquid Hermesetas
In a bowl combine the egg yolks, Hermesetas and the instant coffee and beat until the mixture is fluffy. Beat the egg whites until stiff. Beat the cream and fold into the egg mixture. Then fold in the egg whites. Fill into six gobelets and freeze.
Wash the figs and cut them into wedges. Transfer to a bowl, sprinkle with Hermesetas and moisten with Madeira. Set aside and let marinate.
Place the goblets into hot water for an instance. Then unmold onto serving plates and decorate with the marinated figs.
