Serves 6
500g (1lb 2oz) jumbo oats
25g (1oz) desiccated coconut
25g (1oz) sunflower seeds
25g (1oz) almonds, roughly chopped
3 tbsp sunflower oil
50g (2oz) raisins
100g (4oz) dried apricots, chopped
4 tbsp Hermesetas Granulated Sweetener
To serve

Apple slices
Skimmed milk
Preheat the oven to 180ºC (350ºF or Gas Mark 4).
Mix the oats with the coconut, sunflower seeds and almonds. Spoon the oil into a large roasting tin, add the oat mixture and stir it thoroughly then bake for 15 minutes turning the mixture often so it is evenly toasted.
Leave to cool then stir in the Hermesetas Granulated Sweetener, raisins and apricots.
Store the muesli in a cool dry place in an airtight container.
To serve place 2-3 tbsp in a bowl, add a little skimmed milk and top the cereal with natural yogurt, dried apricot pieces and apple slices, adding a sprig of mint if liked.
