Serves 8
225g (8oz) ready-made stortcrust pastry
For the filling
175g (6oz) cake crumbs
a little almond essence
450g (1lb) red plums, halved and stoned
25g (1oz) flaked almonds
4 tbsp Hermesetas Granulated Sweetener
½ tsp ground cinnamon
Preheat the oven to 180ºC (350ºF or Gas Mark 4).
Line a 20cm/8 inch fluted flan ring with the pastry.
Put the cake crumbs in the base of the flan ring and sprinkle over the almond essence. Mix the Hermesetas Granulated Sweetener and cinnamon together.
Mix about half with the plum halves and tightly pack them into the flan, cut side down, so it is completely full.
Add the flaked almonds to the remaining Hermesetas Granulated Sweetener mixture and sprinkle over the plums.
Bake for 30 minutes or until the plums are soft. Serve hot or cold with custard.
