Serves 4
6 red plums, halved and stoned
6 tbsp Hermesets Granulated Sweetener
8 tbsp grapefruit juice
grated rind and juice 1 ruby grapefruit
2 tbsp cornflour
200g pack low fat cream cheese
lemon balm to decorate
Put the plums in a pan with 4 tbsp Hermesets Granulated Sweetener and the fruit juice. Bring to the boil and simmer gently for 3-4 minutes, until just tender.
Lift the plums out and keep warm. Add the fresh grapefruit juice and raise the heat to bubble the sauce for 2-3 minutes. Mix the cornflour with a little cold water and add, a little at a time, stirring, until the sauce has thickened slightly.
Mix the cream cheese with the remaining Hermesets Granulated Sweetener and the grated rind.
Arrange three plum halves on each plate and put a spoonful of the sweetened cream cheese in the middle. Drizzle the sauce round the outside and serve immediately.
Decorate with fresh lemon balm if available.
