Serves 6
125g (4oz) self-raising flour
2 tbsp cocoa, sifted
1 tsp baking powder
15g (½oz) Hermesetas Granulated
125g (4oz) low fat margarine, suitable for baking, softened
2 eggs
Grated rind and juice of 1 orange
100g sachet white chocolate chips
1 orange, sliced to decorate
Base line a 1.5 litre (2½ pint) pudding basin with a circle of baking parchment and lightly grease the sides. Beat the flour together with the cocoa, baking powder,the Hermesetas Granulated, margarine, eggs and grated rind and orange juice, until evenly mixed and smooth. Stir in the chocolate chips. Spoon the mixture into the prepared basin and level the top. Cover with a double thickness of baking parchment and tie in place.
Cook the pudding on full power in the microwave for 6 minutes. Leave covered for a further 2 minutes. Unwrap, loosen the edges with a palette knife and turn out onto a serving plate. Remove paper disc and arrange orange slices on top before serving hot, with cream or custard.
Tip: Puddings cooked in the microwave must be eaten on the day of cooking as they go hard quickly.
