175g (6oz) rich tea biscuits, crushed
75g (3oz) low fat buttery flavoured spread
For the Filling:
15g (½oz) powdered gelatine
Grated rind and juice of 1 orange
200g (7oz) low fat soft cheese
Grated rind and juice of 1 lime
90ml (6 tbsp) Hermesetas Granulated
1 large mango, puréed
200ml (7fl.oz)virtually fat free fromage frais
Extra fruit for decoration

Melt the low fat spread, mix in the biscuit crumbs and spread over the base of a 22cm/8½ inch springform tin.
In a small bowl sprinkle the gelatine over the orange juice, leave to soak for 10 minutes then dissolve over a pan of simmering water.
Beat the cheese with the orange and lime rind, lime juice, the Hermesetas Granulated, mango purée and fromage frais. Stir through the dissolved gelatine. Pour onto the base and leave the dessert to set overnight.
To serve remove the cheesecake from the tin and slip it off the base onto a serving plate. Decorate with extra fruit and add a sprig of fresh mint.
