Ingredients:

3 slices white bread, with crusts removed
25g low fat butter
25g chopped dates
1 apple, peeled, cored and roughly chopped
1 medium egg
150ml skimmed milk
2 tbsp Hermesetas SteviaSweet
freshly grated nutmeg

Method:
Preheat oven to 180°C. Spread the bread with the low fat butter then use the remainder to grease a shallow 300ml ovenproof dish. Cut each slice of bread into four triangles. Mix the dates and apples together and place half the mixture in the dish. Cover with half the bread triangles then repeat the layer by arranging the remaining fruit and a layer of bread to overlap. Beat the egg and add enough milk to make 150ml of liquid. Stir in the Hermesetas SteviaSweet and some nutmeg and carefully pour the liquid over the bread and fruit layers. Soak for 30 minutes, then bake for 30 minutes until the bread is golden brown, and the pudding well risen. Serve sprinkled with a little extra Hermesetas SteviaSweet.
